Cinnamon Streusel Coffee Cake

Tyson’s Cinnamon Streusel Coffee Cake

Cake:
(1½)¾ C Sugar
(½)¼ C Shortening 
 (1)½ C Milk
(3)1½ C Flour
(4)2 t Baking Powder
(1) ½ t Salt
(2)1 Egg

Streusel Mixture:
(1)½ C Brown Sugar (packed)
(4)2 T Flour
(4)2 T Cinnamon
(4)2 T Melted Butter
(1)½ C nuts, chopped (optional)

Preheat oven to 375° and grease and flour one 9 x 9½ in. cake pan (regular recipe makes one square 9 x 9½ in. pan; to double it, use the numbers in parentheses and a 13 x 9 in. cake pan).  Mix sugar and shortening together then stir in the milk.  Mix the flour, baking powder, and salt in a separate bowl then mix in with the sugar mixture, adding the egg at the same time.

Spread half of the cake batter in the pan then top with half of the streusel, then layer the rest of the batter with the rest of the streusel on top.  Bake for 25-30 minutes (and check for doneness with a toothpick).  Yum!  

A couple of notes: 
1. This isn't really Tyson's. It came from a cook book my mom had when I was growing up but I like to give Tyson credit because he made it once.
